Spring Pea Risotto

Dice the shallot to match the size of the rice grains. Chop the mint, not too big, be civilized about it. Grate the Parmigiano on the fine side until it resembles dust. Keep your Brodo warm in a pot beside the pan.

Sweat the shallot.
Warm a dry pan, add the olive oil, then the shallot. Stir until it softens with no colour on it. Add a pinch of salt to build the base.

Toast the rice.
Add the rice and stir to meld with the shallot and lightly toast. Your nose is the indicator: when you catch that unmistakable scent of toasted rice, it's time to deglaze.

Deglaze.
Pour in the dry white wine and stir until it's absorbed.

Add the Brodo, ladle by ladle.
Add enough warm broth to hold each grain in suspended animation. Stir continuously, adding more a ladle at a time as it absorbs. Cook and taste until the rice is al dente.

Butter.
Off a perfect al dente, add a pat of cold butter and let it meld. Add a touch more broth to loosen it, slightly looser than you'll serve, because the cheese will bind it and it thickens as it cools. Aim for somewhere between oatmeal and soup.

Mantecatura.
Off the heat, stir in the grated Parmigiano until it's glossy and fully incorporated.

Finish and serve.
Stir in the peas, mint, lemon zest, and a squeeze of lemon juice. Loosen with more broth if it's too thick. Serve immediately in a shallow bowl, topped with more Parmigiano.
